Here’s a dish that will leave your guests pleading for more! With UTMT’s Certified Organic Honey, the dish simply comes alive thereby offering a treat to your taste buds!

Here’s how we do it –

For the marinated Paneer

  • 2 tbsp olive oil
  • ½ lime, zest and juice
  • large pinch chilli flakes
  • 2 tbsp soy sauce
  • 2 tbsp UTMT Certified Organic Honey
  • 2 tbsp vegetable oil
  • 150g/5½oz paneer, cut into pieces

For the stir fried rice

  • 2 tbsp vegetable oil
  • ¼ onion, finely sliced
  • 1 garlic clove, crushed
  • ¼ red pepper, chopped
  • handful spinach leaves
  • 150g/5½oz basmati rice, cooked according to packet instructions and drained

For the marinated paneer, combine all the marinade ingredients, except the vegetable oil, in a bowl and mix well. Add the paneer, coat in the mixture and allow to marinate for 5-10 minutes, or longer if possible.

Heat a wok over a medium heat. Remove the paneer from the marinade, setting the marinade aside. Fry the paneer for 5-10 minutes until golden-brown all over. Strain the marinade to remove any small pieces of paneer.

For the rice, heat the oil in a pan and fry the onions and garlic for 2-3 minutes until softened, then add the pepper and fry until the paneer for 2 minutes. Add the spinach, rice and reserved marinade and heat through for a further 3-4 minutes.

Serve the rice with the marinated paneer on top.

Easter Eggs with a Honey Twist

Chocolate Easter Eggs with Honey Hazelnut Fillings

600g white couverture chocolate, chopped
100ml cream
2 Tbsp UTMT honey
¼ cup hazelnuts, toasted, chopped finely
600g dark couverture chocolate, chopped

1. Put 300g of the white chocolate, cream and UTMT honey in a small saucepan. Cook, stirring constantly, over a low heat until smooth. Set aside to cool slightly. Stir in hazelnuts. Put in fridge for 2 hours or until soft and fudgy.

2. Put 200g of the white chocolate in a clean heatproof bowl and set over a saucepan of barely simmering water. Cook until just melted, then remove from heat. Add remaining white chocolate and pulse with a stick blender until very smooth. Test on a chilled plate – the chocolate should set hard. Using your finger, rub melted white chocolate onto inside of egg moulds (see Cook’s tips, above left), then set aside.

3. Put 400g of the dark chocolate in a clean heatproof bowl and set over a saucepan of barely simmering water. Cook until just melted, then remove from heat. Add remaining dark chocolate and pulse with a stick blender until very smooth. Test on a chilled plate – it should set hard.

4. Pour remaining dark chocolate into moulds and tap firmly to remove air bubbles. Invert moulds over a bowl and drain off excess, reserving excess chocolate. Set moulds aside until chocolate is firm, then invert and tap gently to turn out shell halves.

5. Pipe white chocolate and hazelnut mixture into shell halves, then use reserved excess dark chocolate to glue halves together.

P.S: Before using, polish moulds with cotton wool so your eggs are easier to remove. Make eggs in any size you like! Moulds of various sizes are available from kitchenware and craft stores.

Honey – Mustard dip

For an extremely delicious Honey – Mustard dip you would need:

1 cup Mayonnaise

1/2 cup of your favorite UTMT honey

1/2 cup of mustard

Mix all three ingredients together until thoroughly combined.

Hints – Low fat or reduced fat mayo is fine to use – it’s all that I usually have in the house.

Warm the honey for a few seconds in the microwave. It will make it much easier to combine.

* For quick scaling, use 4 parts mayo, 2 parts honey, 1 part mustard. Frequently I’ll use 2 tablespoons mayo, 1 tablespoon honey, 1/2 tablespoon (1 1/2 teaspoons) mustard for 1-2 servings, or 4 tablespoons mayo, 2 tablespoons honey, and 1 tablespoon mustard for 2-3 generous servings.

And there you have it, a scrumptious dip to go with chips, fries or almost anything that you please!

Recipe: Crispy Honey-Banana

Here’s a simple dish that won’t take more than 10 mins of your time. It’s so easy and nutritious that we just had to recommend it!

For Crispy Honey-Banana you would need:

  • 1 Banana (no points for guessing)
  • Your favorite UTMT variant of honey (definitely no points for guessing)
  • Cinnamon (bet you didn’t expect this one)
  • Cooking oil, preferable coconut oil for its essence (did you guess?)

– Heat some oil (enough to shallow fry the bananas) in a pan.

– Cut the banana in medium slices. Ensure it should not be too thin or too fat slices. Toss these banana pieces over the pan for not more than a minute per side.

– You will then have to whisk honey with about a few drops of water to it.

– Switch off the gas and take out the pan from it. You will notice the banana slices are golden brown now. To this golden brown goodie, pour the whisked concoction of honey and sprinkle a bit cinnamon over the dish to add to its taste.

There you have it, a quick, simple and nutritious snack!
